Baking Course Vienna – Bake with Real Grandmas & Grandpas

Baking Course Vienna – Bake with Real Grandmas & Grandpas

Learning to bake is lovely. Learning to bake from someone who truly knows how — someone who has been making the same recipe for 40 years and smiles every time — that is something else entirely.

At Vollpension, our grandmothers and grandfathers pass on their family recipes. Not as a cooking class, not as a show kitchen, but as a genuine shared experience. You bake, they guide, everyone eats together. And at the end you take your creation home.

This is not an experience you forget quickly.

The Baking Courses

Five Viennese classics, five family recipes, five unforgettable afternoons.
Freshly baked Buchteln from the oven – baking course at Vollpension Vienna

Buchteln

The heart of Vollpension. Soft yeast dough pastry, filled with plum jam or apricot jam, baked golden brown — and the smell while baking is indescribable. Our grandmothers have been baking Buchteln for decades. Here you learn why the dough needs to rest, how to fold in the filling and when the Buchteln are perfect.
Viennese apple strudel dough being stretched paper-thin – baking course at Vollpension Vienna

Apple Strudel

Baking a real Viennese apple strudel means stretching the dough until it is paper-thin and a newspaper can be read through it. It sounds harder than it is — when a grandmother shows you how. With cinnamon, raisins, breadcrumbs and regional apples. The result is better than anything you can buy in a café.

Sachertorte with dark chocolate glaze sliced on a plate – baking course at Vollpension Vienna

Sachertorte

The queen of Viennese pastries. Chocolate sponge, apricot jam, dark chocolate glaze. The recipe is legendary, the technique is everything. Our grandmothers know how it is really made — not the hotel version, but the one the family bakes. You learn every step and take a whole cake home.
Kardinalschnitte with mocha cream on a cake plate – baking course at Vollpension Vienna

Kardinalschnitte

A Viennese classic that unfairly lives in the shadow of the Sachertorte: light sponge with creamy mocha filling, elegant and not too sweet. The Kardinalschnitte is the pastry for those who like things a little more refined. You learn how to keep sponge airy, stabilise creams and present the finished result beautifully.

Pink Punschkrapferl with rum glaze on a tray – baking course at Vollpension Vienna

Punschkrapferl

The iconic pink Viennese pastry with rum filling and punch glaze. Unmistakable, essential, and much more complicated than it looks. The right consistency of the glaze, the filling, the timing — our grandmothers have perfected it. A course that is guaranteed to put everyone in a good mood, if only because of the colour.

How a Baking Course Works

1

Arrive and Get to Know Each Other

You arrive at our Backstudio in the 6th district, meet your grandmother or grandfather and receive a coffee or tea. All utensils including an apron are provided.

2

Bake Together

Your grandmother or grandfather explains every step, demonstrates the technique and is on hand for questions. You do the actual baking — no watching, real hands-on participation.

3

Taste and Enjoy

Of course the pastries are tasted too — using the version made by your baking senior. Your masterpiece stays whole and is packed safely in a cake box.

4

Take Everything Home

Everything you baked goes home with you. The recipe and a certificate of completion too.

Included in the price: all ingredients and materials, coffee or tea during the course, the finished creation to take home and the recipe to bake again at home.
