In our Buchteln baking class in Vienna, seniors show you how yeast dough should feel in your hands, when it has been kneaded enough, and why you must never rush it.

What you will learn

  • Starting the yeast dough properly: why the milk has to be lukewarm, what a starter does and how to tell that the yeast is working.
  • Kneading until the dough shines: the moment it comes away from the bowl and turns silky, and what that feels like under your hands.
  • Letting it rise: why warmth and time are the two most important ingredients, and what happens when you get impatient.
  • Filling and folding: wrapping plum butter or apricot jam neatly so nothing leaks out in the oven.
  • Baking them side by side: why Buchteln have to touch each other in the pan to stay fluffy inside and turn golden outside.

How your baking class works

1. Arriving

Put on your apron, take a coffee or tea, say hello. Your baking grandma or grandpa tells you where the family recipe comes from.

2. Hands on

Everyone bakes, nobody just watches. Mixing, kneading, filling, arranging the pan, with plenty of talking while the dough rises.

3. Tasting

While the Buchteln are in the oven there are snacks and drinks. Then everyone tastes together, warm and dusted with icing sugar.

4. Taking it home

Your own Buchteln go into a grandma cake box, and the recipe comes with you as a certificate.

The class takes place at the Vollpension baking studio at Mariahilfer Straße 101 in Vienna’s 6th district and is held in German and in English. No previous experience needed.
