Learn the Chocolate Glaze from a Grandma
What you will learn
- Getting the batter right: bringing butter, chocolate and egg yolks to the right consistency and folding in the egg whites without knocking the air out.
- Cutting and filling cleanly: slicing the cooled cake horizontally and filling it with apricot jam without the layers sliding apart.
- The apricot coat: the in-between step almost everyone skips, and the reason why some glazes turn out glossy and others blotchy.
- Cooking the glaze: bringing sugar, water and chocolate to exactly the right point, and how to tell when it is ready to pour.
- Pouring in one go: the movement that lets the glaze flow over the cake by itself instead of being spread with a knife.
How your baking class works
Put on your apron, take a coffee or tea, say hello. Your baking grandma or grandpa tells you where the family recipe comes from.
Everyone bakes, nobody just watches. Whisking the batter, filling the cake, coating it with jam and glazing it, with plenty of chatting in between.
While the cake bakes and cools there are snacks and drinks. And of course there is tasting, classically with whipped cream.
