In our apple strudel baking class in Vienna, seniors show you the one move you will never learn from a video: stretching the dough over the back of your hands until it is paper-thin and still in one piece.

What you will learn

  • Making strudel dough from scratch: the right flour, the right water temperature and why the dough needs to rest before it can be stretched.
  • Pulling the dough by hand: the technique most people fail at in their own kitchen, step by step and with four hands instead of two.
  • The filling: which apple varieties work best, how much sugar it really needs and what breadcrumbs are doing in there.
  • Rolling and baking: folding it neatly, brushing it properly and knowing exactly when it is done.
  • Grandma knowledge along the way: the small tricks you will not find in any cookbook, because until now they were only ever passed on by hand.

How your baking class works

1. Arriving

Put on your apron, take a coffee or tea, say hello. Your baking grandma or grandpa tells you where the family recipe comes from.

2. Hands on

Everyone bakes, nobody just watches. Mixing, stretching, filling, rolling, with a lot of talking and even more laughing in between.

3. Tasting

While the strudel is in the oven there are snacks and drinks. Then everyone tastes together, warm and fresh out of the oven.

4. Taking it home

Your own apple strudel goes into a grandma cake box, and the recipe comes with you as a certificate.

The class takes place at the Vollpension baking studio at Mariahilfer Straße 101 in Vienna’s 6th district and is held in German and in English. No previous experience needed.
