Learn to Pipe Meringue from a Grandma
What you will learn
- Whipping meringue to the right point: when the egg whites are firm and glossy, and how to tell when you have whipped them for too long.
- Preparing the sponge batter: beating it light and folding it so that it holds its shape while piping.
- Piping the stripes: how to hold and guide the piping bag so meringue and sponge sit evenly side by side without spreading.
- Baking it properly: why the Kardinalschnitte is baked at a low temperature so the meringue stays pale and does not crack.
- Filling and slicing: piping in the cream filling, assembling the layers and cutting clean slices.
