Cake trimmings, apricot jam and a splash of rum became a speciality of its own, long before anyone used the words zero waste. In our Punschkrapferl baking class in Vienna, seniors show you how to get the punch mixture to exactly the right consistency and how to pour the pink glaze so it stays smooth and covers properly.

What you will learn

  • Mixing the punch filling: the right balance of sponge, apricot jam, chocolate and rum, and how to tell when the mixture holds its shape instead of being too wet or too dry.
  • Leftovers turned classic: why the Punschkrapferl was invented from cake trimmings, and how to use the same principle with your own leftovers at home.
  • Layering and cutting: stacking the sponge layers and cutting even cubes so all your Krapferl look the same.
  • The pink glaze: getting the consistency right so it covers well, stays smooth and does not run off the cake.
  • Glazing and decorating: coating the cubes without turning your fingers, the table and your apron pink as well.

How your baking class works

1. Arriving

Put on your apron, take a coffee or tea, say hello. Your baking grandma or grandpa tells you where the family recipe comes from.

2. Hands on

Everyone bakes, nobody just watches. Mixing, layering, cutting and glazing, with plenty of chatting in between.

3. Tasting

While the glaze sets there are snacks and drinks. Then everyone tastes together.

4. Taking it home

Your own Punschkrapferl go into a grandma cake box, and the recipe comes with you as a certificate.

The class takes place at the Vollpension baking studio at Mariahilfer Straße 101 in Vienna’s 6th district and is held in German and in English. No previous experience needed.
